3 Fave Crockpot Recipes for the Fall!

            I am going to be real with you friends…. I do not do a whole lot of cooking. Last time I tried to cook dinner, I set off the fire alarms and it took the firemen that showed up to our house one hour to get them to shut off LOL. So needless to say, I live for a good crockpot meal!! They are pretty easy, you almost always have left overs, AND they are DELISH! I wanted to share three of my very favorite recipes to make when the weather gets a little cooler!

  1. Cheesey Potato Soup

This is Jordan’s very favorite meal I make! It is THE EASIEST to make and is such a crowd pleaser! My mom made this for us all the time growing up and it was the first thing I asked for when I came home from college. This soup is hearty and perfect for a cold night!

Ingredients:

30 oz package of  diced potatoes

32 oz box of chicken broth

1 can of cream of chicken soup

1 package of cream cheese

Bacon Bits – normally do the store bought package – I use half of the bag

Shredded Cheddar Cheese – we use a whole bag because WHY NOT

Salt and Pepper to taste

Literally friends you dump all of those ingredients into your crockpot –set that bad boy on low and cook for 8 hours or until the potatoes are tender! Top it off with shredded cheese and extra bacon bits and BOOM. All done!

  • Chicken and Noodles

This is a family favorite of ours as well. There is a festival in our hometown that makes the BEST chicken and noodles. My mom found a copycat recipe a few years back and we have been making it religiously for chilly nights!

Ingredients:

  1. 24 oz Package of Frozen Egg Noodles
  2. 2 cans of cream of chicken soup
  3. 1 stick of butter (cut into pieces)
  4. 32 oz box of chicken broth
  5. 3 Large Chicken Breast
  6. 1 tsp of Chicken Buillion

Once again – all you have to do is cook this on low for 8 hours and you have the perfect easy and delicious meal!! CLICK HERE for the recipe my mom found! We owe it all to this website LOL!

  • Chicken Noodle Soup

This one takes a little more prep work than the other two – lol. But it is seriously my very favorite thing to make in the winter! It is a little lighter than the other recipes but it has amazing flavor!

Ingredients:

1 package of egg noodles

2 Large Chicken Breast (boneless and skinless)

2 32 oz boxes of chicken broth

1 cup of chopped carrots

½ cup of chopped onions

1 cup of chopped celery

1 tsp chicken buillion

½ tsp dried thyme

½ tsp dried rosemary

2 cloves of garlic (minced)

Salt and Pepper to taste

Directions: Add the chicken, chicken broth, carrots, onion, celery, garlic, thyme, rosemary, salt and pepper into the crockpot. Stir together then set your crockpot on low and cook for 6-8 hours.

Once the chicken has been fully cooked – remove from crockpot and use two forks to shred. Add the chicken back in and open your package of egg noodles! Pour the egg noodles into the crockpot, put the lid to your crockpot back on, and let the noodles cook on low for about 30 minutes.

And voilà! Delicious chicken noodle soup!
